Today we made “Melted Snowmen” cookies. It was my first time making them, and I had to make some changes to the recipe because I did not have some of the things I needed. I learned a lot of what not to do, but we had a great time!

Unfortunately, I used Pillsbury Dough Sugar Cookies, which I have never used before. I didn’t realize how B-I-G they would get!
Didn’t matter too much.
It was a total success!
Obviously, I used the ‘scoop and slap’ Sugar Cookies because, let’s face it, I am running out of patience with 2 sick kiddos here at home. I didn’t get to go to the store, so I had some of the Pillsbury Sugar Cookies left over and used that. I also didn’t have the right icing (you’re supposed to use the Royal Icing made by 3 egg whites and 1 pound powdered sugar), but I did have some whipped icing that was only expired by one month, so I whipped that some more and used that. I also had some leftover colored gel for color… but I found out that separates after a time and it kinda oozed all over. I did have the large marshmallows for the head (score!), so that was nice.
You’re supposed to:
- Cook sugar cookies according to directions (if you make your own, good for you!)
- Let cookies cool, then cover with icing (I used the whipped, like I said, and it was fine. I put it in a baggie, cut the corner off, and squeezed in on each cookie, then smoothed it with the back of a spoon)
- Immediately microwave marshmallow for 5 seconds (the recipe I saw called for 10 minutes. That was bad. My microwave is apparently cooks at atomic levels)
- Place marshmallow on edge of cookie
- Decorate as you wish.
It was a lot of fun. The Youngest was even able to get involved… although I think she liked licking the icing more than anything else.
